Course 1 — Oysters + Miso Raw oyster with jalapeño and asian pear mignonette. Roasted Oyster with togarashi and charred scallion butter. Miso soup, mushrooms, and wakame.

Course 2 — Tempura Shrimp, sweet potato, squash, and hen of the woods + lemon togarashi. Charred leek mentsuyu.

Course 3 — An Ode to Salmon A salmon roll with pickled carrots, cucumber avocado mousse, and asian pear ponzu topped with raw salmon. Torched green tea nigiri. Pepper lemon nigiri.

Course 4 — Tuna Tataki Tuna tataki rice bowl with spinach goma, soy marinated egg, parmesan ginger soy, and preserved lemon furikake.

Course 5 — Black Sesame Butter Mochi Whipped crème fraîche, honey glazed asian pears, tempura crumble.
