Lowcountry Recipes: ’Fuskie Favorite Red Rice with Sausage and Beef’Fuskie Favorite Red Rice with Sausage and Beef

Serves 8 to 10

2 tablespoons vegetable oil
4 slices smoked bacon
1 pound pork or beef sausage links, cut into ½-inch-thick rounds
1 large onion, diced
½ pound ground beef
½ green bell pepper, diced
½ red bell pepper, diced
1 rib celery, diced
1 teaspoon dried thyme
1 tablespoon minced garlic
2 (14.5-ounce) cans diced or stewed tomatoes, with juice
2 tablespoons tomato paste
8 cups hot water
Salt and pepper to taste
1 teaspoon sugar
3 cups long-grain white rice

In a large pot, heat the oil over medium-high heat. Add the bacon, sausage, and onion and sauté for 1 to 2 minutes. Remove from the pot, leaving the bacon fat. Add the ground beef to the pot and fry for 3 to 4 minutes, until loose and brown, then return the onion mixture to the pot.
